Oh, I am soooo making these this weekend. Chunky PB rocks. Thanks, Karen! It’s a toss up between raspberry and apricot preserves, but I think I’ll go with the raspberry. Maybe I’ll make some of each.

K’s Scrumptious Peanut Butter and Jelly Cookies
Ingredients:
1 stick of soft butter
1/2 cup dark brown sugar
1 Tsp good vanilla (or one TB of cheap vanilla)
1/8 tsp salt
1/4 tsp baking powder
1 cup peanut butter (I like chunky, but go with what you like)
1 1/2 cups flour
Jelly or preserves
Mix wet ingredients, plus peanut butter, then add the dry. Cookie batter should be sticky but dry to the touch. Using a melonballer, fill cookie sheet with about an inch between cookies. Smoosh down with fork, then put a finger or thumb print into each cookies. Fill the impression with jelly or preserves of choice and slip into a 375 degree oven for 10-15 minutes (depending on how cool your oven is).
Profit!

Hmm. Make them anyway? Eat them all myself? Take the rest to work?

Palming off baked goods on coworkers is always an option. Cupcakes and muffins don’t seem to disappear as quickly as cookies or brownies, but I’ve never seen anything last more than a day and a half in the office, if it’s set out where people can easily find it.

It sounds really good. I may have to go with half chunky, and half smooth, though. We don’t seem to have enough chunky left for a whole cup. Light brown sugar will have to do; it’s all I’ve got.
If I ever get tired of life, I’ve decided I want to die from eating too many cookies, muffins, brownies and the rest.
